tired of having regular omelet? here’s the tofu omelet, enjoy low cal healthy meal~! ^^b
材料
[材料] [6片] [6pc]
Firm tofu—200g
Shitake mushrooms—2pc
Carrot —1/3pc
Edamame—50g
Egg—2pc
Sugar—1tspn
Sake—1tbspn Soy sauce—2tspn Salt—1/4tspn
做法
(1) put a plate on firm tofu, and stack some heavy items on the top to drain excess water.you can also use cloth to wring out the water.
(2) while waiting, prepare other ingredients. 1/3 piece of carrot needs to be shredded.
(3) so does shitake mushrooms.I am using fresh shitake mushrooms, you can replace with soaked dried shitake mushrooms that gives denser mushroom flavor. if there is anything else you want to add, go ahead give it a try!
(4) stir-fry shredded carrot at medium heat.start with the ingredient that needs time to get cooked the most..
(5) and then add shitake mushroom, keep stir-frying for a little while,,
(6) add sake..
(7) add all the seasonings “except for sugar” mix it well.
(8) by hand, crush the tofu into crumbles over the pan.
(9) stir well make sure tofu and other ingredients are well corporate and shut off the heat, cool it down.
(10) add some sugar into eggs and stir well..by adding sugar, egg’s boiling point will become higher. it won’t easily get cooked even add hot items into the egg.
(11) add 9. into the egg.
(12) also add some blanched beans. mix well. this time I am using Edamame. *you can use any other green vegetables, such as green peas, asparaguses, just make sure you blanch them before adding.
(13) add some oil in frying pan and add large spoon of mixture. cook it at low heat until changing the color from the out side.you may want to adjust the size depending on you frying pan. you could make one whole big piece of it like pizza, but you may have hard time to flip it… ; p
(14) after flipping them all, cover it up keep cooking another 2~3min. at low heat.tofu omelet itself already has lots of flavor, you don’t have to prepare any other sauce to go with!

firm tofu has more texture, besides soft tofu is little difficult to drain excess water.
but if you still like using soft tofu, that’s OK.
you just have to be extra careful when pan frying! ; )
